Refreshing Summer Servings



Now that summer is here, look for fun and simple recipes to make that are refreshing and delicious, as well as easy to serve outside. Share with your family and friends, you will enjoy them.
Shrimp Ceviche

When we think of summer we naturally picture the beach, the water and spending time with family and friends. This dish has a great twist to traditional Peruvian Ceviche with a refreshing hint of lime and Maggi seasoning sauce. Every seafood lover will agree this is a great refreshing treat for summer. (Makes 4 servings) 2 lb. raw small shrimp, peeled and deveined 2 1/4 cups fresh lime juice, divided 1 cup sliced green olives 2 small tomatoes, seeded and chopped 1/2 red onion, thinly sliced 1/4 cup chopped cilantro 3 to 4 tablespoons MAGGI Seasoning Sauce 3 tablespoons olive oil 2 tablespoons chopped pickled jalapeños Chopped avocado
PLACE shrimp in large saucepan. Cover shrimp with water. Bring water to a boil; reduce heat to low. Cook for 3 minutes or until shrimp turn pink. Place shrimp in ice water to chill. DRAIN shrimp and cut into 1/4-inch pieces. Place shrimp and 2 cups lime juice in medium glass bowl; mix well. Cover; refrigerate for 24 hours. Drain shrimp; place in large serving bowl. Add remaining lime juice, olives, tomatoes, onion, cilantro, seasoning sauce, oil and jalapeños; mix well. Refrigerate for 2 hours. Serve with chopped avocado.
Delicias Tres Leches Ice Cream Cake

This one speaks for itself; with a new line of Latin flavor ice cream from Nestlé, your kids will love this cool new twist on a beloved classic that will leave everyone asking for more. (Makes 12 servings) 4 tablespoons NESTLÉ® LA LECHERA® Dulce de Leche (squeezable bottle), divided 1 container (8 ounces) frozen whipped topping, thawed 2 packages (6 ounces each) Maria cookies, finely crushed (about 3 cups) cup (1 stick) butter, melted cup granulated sugar 1 quart (946 mL) Tres Leches NESTLÉ® Delicias Frozen Dairy Dessert, softened FOLD 3 tablespoons dulce de leche into whipped topping in medium bowl until well blended. Set aside in refrigerator. COMBINE cookie crumbs, butter and sugar in medium bowl. Press onto bottom of 9-inch springform pan. STIR tres leches dairy dessert until smooth. Pour over prepared crust; spread smooth. Freeze for 4 hours or overnight. REMOVE side of pan. Spread whipped topping mixture over top of cake only, not the side. Drizzle remaining 1 tablespoon dulce de leche over top; swirl with a wooden pick to create a swirled effect. Serve immediately.
Delicias Piña Colada Smoothie

Savor the taste of piña colada without the alcohol. You can enjoy this Piña colada smoothie with your kids. This simple and quick recipe calls for few ingredients, and of course, Delicias coconut flavor ice cream. This smoothie allows for little time in the kitchen, and more time with your loved ones. (Makes 2 servings) 2 cups Coconut NESTLÉ Delicias Frozen Dairy Dessert ? cup pineapple juice 1 cup pineapple chunks 2 tablespoons toasted coconut flakes for garnish 2 pineapple chunks for garnish PLACE coconut ice cream, pineapple juice and pineapple chunks in blender. Blend until smooth. Divide between two glasses. Top each smoothie with 1 tablespoon toasted coconut flakes and place one pineapple chunk on rim of each glass. Serve immediately.
Delicias Mango-Tropical Dessert

f you’re looking to treat family and loved ones this summer with scrumptious treats, but don’t want to break your budget, I recommend making this delicious and uplifting parfait as a great dessert in disposable cups and silverware as an affordable option and easy clean up. (Makes 2 servings) 1 teaspoon granulated sugar 1 small banana, cut into 8 slices 1 teaspoon butter 1 cup Mango NESTLÉ Delicias Frozen Dairy Dessert 2 fresh strawberries, sliced 1/4 cup chopped fresh kiwi fruit Sweetened whipped topping for garnish 2 tablespoons toasted almond slices SPRINKLE sugar evenly over both sides of banana slices. Melt butter in medium skillet over high heat. Cook banana slices for 1 to 2 minutes on each side or until caramelized. Set aside. SCOOP mango dairy dessert evenly into each of 2 dessert bowls. Top each with 4 caramelized banana slices, 1 sliced strawberry and 2 tablespoons chopped kiwi fruit. Garnish with whipped topping and 1 tablespoon toasted almonds.
